In the Kitchen ~ Traditional Flap Jacks

Last week we had a craft evening at the church... and I wasnt sure what to take to eat. A friend said take something British... so after a lot of pondering... I came up with Flapjacks.!

Now in the US...Flap jacks are pancakes... but in the Uk.. they are a baked goodie made from a mixture of oats, sugar, butter and syrup. It traditionaly uses Golden Syrup which I had to order the from Amazon as they dont sell it over here...unless you can find a British Grocery Store... and there isnt one locally.

I cook them in two ways... a thicker bar is chewy... the thinner they are (use a 9x9 tin) the crispier they become. Whichever way.. they are quite delicious... and the ladies loved them

Traditional Flapjacks

½ cup butter (1 stick) cubed
½ cup brown sugar packed
5 tablespoons golden syrup or dark corn syrup
1 teaspoon vanilla
2⅓ cups quick-cooking oats

  • Preheat the oven to 375F
  • Grease an 8-inch square baking pan.
  • Melt the butter in a pan over medium heat. 
  • Add the brown sugar, syrup, vanilla and cook until the sugar is dissolved and fluid. 
  • Remove from heat and whisk until there is no visible butter and the mixture resembles melted caramel.
  • Add the oats and mix until well coated.
  • Spread evenly into the prepared pan and bake 15-20 minutes or until golden.
  • The middle should be springy but not extremely soft
  • Let cool 10 minutes then cut into rectangles (or desired shape).
  • Transfer the flapjacks to a wire rack to cool completely before serving.
