In The Kitchen....Meatloaf Meatballs

Another busy week in the kitchen. Chutney was added to the storecupboard.with the tomatillos I was gifted last week. The house smelled of vinegar for a couple of hours...but it was a warming and comforting feeling.
As well as the weekly bread baking.. more chocolate chip cookies were made for hubby to take to work... Bananas were 29c a pound at the local market so I made and two loaves of Banana, Walnut and Chocolare Chip Banana Bread...one for now and one for the freezer.
And talking of the freezer..this weeks vintage recipe is one of my mother in laws... and my hubby says it reminds him of his childhood. Meatloaf wasnt very popular in Engand as I was growing up.. This recipe makes about 20 meatballs... a bit much for the two of us. but they freeze really well


Meatloaf Meatballs


This recipe makes about 20 meatballs... a bit much for the two of us. But they freeze really well and the extra will go towards another  meal.
1 lbs. ground beef
1 large egg
1 sleeve ritz crackers, crushed
1/3 C. diced onion
1 small carrot, grated
1/4 C. ketchup
1 tsp. worcestershire sauce
1 tsp. garlic powder
1/2 tsp. pepper
1/2 tsp. oregano
  • Mix everything together in a bowl 
  • Divide the mixture to form 20 meatballs.
  • Try not to over handle  
  • Place on a baking sheet lined with tinfoil or parchment paper
  • Bake in a 375 degree oven for 25 - 30 minutes.
  • Remove and cover with foil while preparing the gravy.
Serve with your favourte Meatloaf glaze, gravy or sauce... For me today it's a bacon and mushroom gravy

Aaaaand...I really need some lesson on how to take pictures of food!!!
