One More Hurdle...

Well.. we thought we were done.. On Tuesday night Escrow called to congratulate us... saying that everything was completed...we just had to come into their office at two yesterday to sign. So...MrD..left for work at 1 am...yes 1am..so he could get his hours in and we could travel to the Escrow office to sign the papers.

Just after 9am... he got a call from the mortgage lender. to say the underwriters had messed up and overlooked something. Apparently because of the great mortgage rate MrD got...he should have taken an online course...and a test...and did Mrd have an hour or two to complete it asap? I have never heard of the like! Until it was done..we couldnt close...or get the the closing fee amount to wire transfer.
He made a start...whilst still trying to do his work... but by noon he had only completed..and passed.. 3 out of the 8 sections. So he came home and we did it together. Four oclock...we submitted the test... but of course by that time it was far to late to travel to the Escrow office or even attempt to make it to the bank. 

No wonder MrD keeps saying hes not going to celebrate until the the last dot is put down and keys are in his hands

So.. with changes..either good or bad.. a little thing called anxiety creeps in. Hopefully today we will hear something but in the meantime.. to cope with feelings of being slightly overwhelmed.. Im going to keep myself  busy.. baking bread.. making Bolognese Sauce for the freezer.. cleaning and see what else I can find to pack. It will give me a sense of being in control.

I know we keep having little set backs...its all part of the house buying process. I guess so we will just see what happens today. We are a whisper away.

Easy Slow Cooker Bolognese Sauce


This recipe is a family favourite. I have made it for so long I could make it with my eyes closed. A very thick and hearty meat sauce...simmered in the slow cooker... and then served with spaghetti or chunky pasta.
This recipe makes a good amount.. so when cold, I seperate into baggies for the freezer


2 tb olive oil
1 cup Grated carrots
1 cup Celery, minced
1 cup Onions, finely minced
1 cup Mushroons
1 cup Bell Peppers
1 lb Ground beef (80/20)
1 lb Ground Italian Sausage
125 oz jar store-bought Marinara
125 oz jar store-bought Four Cheese Sauce

  • In a large saucepan heat olive oil over medium heat. 
  • Add in carrots, celery, mushrooms, peppers and onions 
  • Sauté until they're just tender, about 3 minutes. 
  • Pour this mixture into a slow cooker.
  • Add the ground beef and ground pork to the pan. and season with salt and pepper
  • Cook, breaking up any lumps, until it is nicely browned, about 15 minutes. 
  • Drain off any excess fat and add to slow cooker
  • Pour in the jars of store-bought sauce and stir well
  • Cover and cook on low for 6 hours, stirring occasionally
  • Serve over your favorite pasta and top with freshly grated parmesan cheese
