Cooking Thursday ~ Cheese and Garlic Biscuits

Its been a little chilly ...and has been raining hard since last night, so for dinner I made a hearty beef stew. To go with it.. I made some cheesy garlic biscuits. Its the first time I have ever made biscuits. Being from the Uk...biscuits are what Americans call cookies. These look like our version of cheese scones. In any case..they didnt turn out too badly for a first attempt ...and hubby said they were good. As long as he is happy.. thats all that matters to me

Cheesy Garlic Biscuits

Cooking spray
1 3/4 cups all-purpose flour
1 tablespoon plus 2 teaspoons baking powder
2 1/2 teaspoons sugar
1/4 teaspoon salt
3 tablespoons vegetable shortening, at room temperature
4 tablespoons cold unsalted butter, cut into 1/2-inch pieces
6 ounces grated yellow cheddar cheese (about 1 1/4 cups)
3/4 cup whole milk

For the garlic butter:
3 tablespoons unsalted butter
1 clove garlic, smashed
1 teaspoon chopped fresh parsley

  • Preheat to 425 degrees. 
  • Lightly mist a large baking sheet with cooking spray.
  • Mix flour, baking powder, salt and sugar in a bowl.
  • Add butter and shortening and rub in with fingers until it resembles crumbs.
  • Add the cheese and mix well
  • Add milk slowly to dry ingredients while mixing. 
  • You should have a soft dough, but not wet or very sticky.
  • Do not overwork the dough or the biscuits will be tough
  • Sprinkle flour on a wooden board or working surface. 
  • Turn dough out on that. 
  • Pat out lightly with fingers until about 1 1/2 inch flat, or a little less.
  • Press out rounds about 2 1/2 inches across.
  • Gather excess dough and repeat process.
  • Bake until golden, 15 to 20 minutes.
  • Meanwhile, make the garlic butter: 
  • Melt the butter with the garlic in a small saucepan over medium heat 
  • Cook for 1 minute. 
  • Remove from the heat and stir in the parsley. 
  • Brush the biscuits with the garlic butter and serve warm.

  1. They certainly look delicious!!! I love a good biscuit!
    My husband made cinnamon rolls today and your post reminded me of the year we spent December in Scotland with Amber and Mike. This was BEFORE they had quadruplets!!
    We had the dickens of a time finding yeast and confectioners sugar! He did make the rolls and sprinkled them with what he thought was sugar but was actually Sweet and Low! Mike was SO hungry for cinnamon rolls that he ate them without even noticing!!
    Do you call all desserts 'Pudding?' I love that!

    1. I guess we do say 'Whats for pudding?' which covers a wide variety of desserts. A real UK pudding is usually made with flour...and looks like cake and served hot e.g Christmas Pudding, Suet Pudding and Sponge Pudding! And I wont confuse you by mentioning Yorkshire Pudding which is something completely different Lol! Oh and btw.. Confectioners sugar is known as Icing sugar in the uk...Sweet and low is an unusual alternative lol
