In The Kitchen ~ Cake Box Red Velvet Bundt Cake...

The Christmas baking is done for this week for ourselves, for church and for gifts. 
Mince Pies made with my homemade mincemeat, 
Sugar Cookies 
and a Red Velvet Cake 

Next week I hope to make some different cookies and a cherry pie to have on Christmas day... No Plum Pudding in this house....sigh

The Red Velvet Cake was a success..although the icing left a lot to be be desired. I made it too thick and didnt drizzle as much as I wanted... but once  started.. I had to finish! A few dried cranberries and a sprinkle of powdered sugar prettied it up a bit. I used a regular cake box mix.. but by adding some other ingredients it came out amazing.

 Cake Box Red Velvet Bundt Cake


1 box Red velvet cake mix
1 small pk (3.4oz) instant chocolate pudding 
1 cup melted butter 
4 eggs 
1 cup sour cream 
1/4 cup cold plain coffee 
1 tsp pure vanilla extract 

For the frosting 
8oz cream cheese at room temp 
1 1/2 cup powdered sugar, sieved
1 stick (1/2 cup)butter at room temperature 
1 tsp pure vanilla extract

  • Grease and lightly flour a  bundt pan 
  • Preheat oven to 350 degrees
  • Mix together cake mix and pudding.
  • In another bowl mix the eggs, melted butter,sour cream and coffee 
  • Add the wet ingedients to the dry
  • Using your mixer on slow speed, beat the ingredients togethter
  • Increase the speed to medium/high and beat for 2 minutes until well mixed
  • Pour into greased bundt cake pan.
  • Bake for 35-40 Minutes until an inserted skewer comes out clean
  • Place on a baking rack and let cake cool before frosting it.
  • For the frosting cream together the cheese, butter and vanilla until smooth
  • Combine with half of the confectioners sugar.
  • Whisk in the remaing sugar
  • Drizzle frosting onto your cake.

Its the best cake I have made in a long time. Moist.. dense... rich and delicious..

Its beginning to smell a lot like Christmas

  3. Red velvet cake is my daughter's favorite. She asks for it for her birthday. Yours looks very pretty and I'll bet it tasted delicious!
