This is such a cute idea. I wish I had known about it when my children were growing up, they would have loved it.
Make some edible dirt by crushing up some oreos and mixing it with some chocolate pudding.
Fill a small pot and plant a 'seed'....a peppermint
Have the child water it and every day place a bigger piece of candy inside the dirt while they sleep!
