Little Miss had a lovely day today when she attended a birthday party and met her idol Cinderella.
For me it served as a reminder how fast time is passing as she wore the same dress as she did when we went to Disney land two years ago.
Amazingly the dress still fits... but it was at least 3 inches longer..
Slow down Little Miss..
I thought it was about time I used up the cherries that I bought the other day.. and made a yummy cherry pie... MrDs favourite. It turned out really good.. and MrD loved it
Cherry Pie
A simple recipe taken from my grandmothers kitchen. Absolutely delicious and a taste of home
2 pie crusts homemade or store bought
5 cups fresh cherries washed and pitted
3/4 cup granulated sugar
1 tablespoon lemon juice
1/2 teaspoon almond extract
1/4 cup all purpose flour
1/4 cup corn starch
1 tablespoon butter
Eggwash:1 large egg beaten with 1 Tablespoon milk
1 tablespoon coarse sugar optional
vanilla ice cream or whipped cream optional, for serving
- Roll one pie crust into the bottom of a glass pie plate and refrigerate while making the filling.
- In a large bowl, stir together cherries, sugar, lemon juice, almond extract, flour and corn starch.
- Pour into pie plate and spread cherry filling out to fill evenly.
- Dot the top with butter.
- Top cherry filling with lattice pie crust or a vented full crust.
- Crimp edges.
- Brush top crust with egg wash and sprinkle with coarse sugar.
- Bake at 400 degrees for 1 hour or until the bottom crust looks golden brown.
- If top crust starts to get too dark, cover with foil until bottom has fully cooked.
- Remove from oven and cool completely before cutting and serving.
