Whats For Dinner ~ Meal Plan Monday

Can you believe that tomorrow we will be slipping into September.. and maybe all things Pumpkin Spice? Ok.. so thats a bit soon.. but wow.. the days are flying by. Im an Autumn kinda girl as the heat here gets too much for me. It was much cooler on my walk this morning as the season is starting to change.. Flowers are dying back..but there are still a few "pretties" out there

Today is the last day of the Every Bit Counts Challenge. Its been hard work... but great fun. And Im not finished yet!. I had to revise the last couple of days. I wanted to make a couple of pie fillings.. but the Clear Jel that I ordered that was supposed to arrive Friday.. was changed to today. So instead I chopped some turnips for the freezer ( I know I know..I said no more freezer stuff) and right now I have the last of my "free" plums chopped and in the dehydrator. 

Im quite tired.. not just from canning etc... but Im tired of whats going on in America right now.. The violence..the destruction.. the deaths.. Im just going to pray more... get into the Word more.. and have Faith.

Apart from that I have no set plans this week..although MrD wants to take me somewhere this weekend...but hes not saying where. Something to look forward to

Thursday Kitchen ~ and No Knead Artisan Bread

A busy week in the kitchen.. but the #everybitcountschallenge is entering the last few days. I have been given so much fresh produce from friends gardens it has filled my freezer and store cupboard . Im tired..but its a good tired.. and I will continue to grow my pantry.. but not at such a pace.

A few days ago.. while chopping vegetables.. I was watching one of my favourite homesteading channels on Youtube.. They were talking about how when they were away spending time with family... the power to one of their freezers had gone off.. and they almost lost everything inside. This got me thinking.. and I dont want this to happen to us. So... I have decided to start using my freezer as a stop gap to store food until I get around to canning or dehydrating it. Of course...some things cant be preserved this way.. but I can make a good start...

So what have I stored this week. Lets see..


Old Fashioned British Chutney... which I used to make back home in Wales using the green tomatoes from my garden. Here I used tomatillos... and they worked perfectly. Lovely served with cold ham and cheese.

Blackberry and Apple Jam.. using blackberries from my freezer and some of the apples I have been given

A gift of seven peaches was turned into some lovely peach preserves..

I got a 10lb bag of Russet potatoes for just $2 so I sliced, blanched and dehydrated them... 
I used some from my old stock to make a lovely au gratin for Mondays dinner

Using more tomatillos..I made my first ever Salsa Verde.. which was so simple... and delicious

And... my first ever garden salsa.  a lot of chopping.. but so pretty. Too many jalapeños for me but MrD loves it. And talking of jalapenos.. why didnt someone tell me about wearing gloves when chopping the peppers. Jalapeño Hands is a real thing. My poor fingertips were on fire for most of the day.. Lesson learnt!
And finally.. Still being mindful of the freezer going out... I used most of my bags of frozen strawberries to make Lemon and Strawberry Jam.. making sure I left a couple of baggies in the freezer for smoothies. This jam is scrumptious...and is wonderful on my homemade bread.

No Knead Artisan Bread


This bread is so easy to make... and it is replacing shop bought in our house. The original recipe says to make it in a Dutch oven... but I actually use a lidded casserole dish..and it works great. Recentlu I started putting it in a bread tin... much easier to fit in the toaster!

3 Cups Flour (Bread or All Purpose)
1/4 Tsp. Yeast
1 Tsp. Salt 1 1/2 - 1 3/4 Cup Water
  • In a large bowl, mix the flour and salt and stir to combine.
  • Add the yeast and water to the flour and stir with a spoon until a sticky dough forms and no pockets of raw flour remain. 
  • If you wanted to add cheese or herbs, do that here and stir them in
  • Cover and set aside for 3 hours. until the dough more than doubles
  • Using a dough scraper or spatula turn the dough onto your floured bread board
  • Sprinkle the dough with a tablespoon of flour and flour your hands well. 
  • Then working gently, shape the dough into a ball 
  • The dough will still be sticky. That's okay.

Now you can choose how to bake it... 

In a Dutch oven or Casserole Dish.. which will give a  round Artisan loaf....
  • Line a bowl with parchment paper and place the dough into it
  • Cover with a towel and leave rest for 35 minutes
  • Meanwhile.. preheat the oven to 450
  • Put in your Dutch oven or 5 quart lidded casserole dish inside to heat up. 
  • When the dough is ready, remove the pot from the oven and set aside. 
  • Lift the parchment paper and dough into the pot
  • Cover with the lid and bake 35 minutes
  • Then remove the lid and bake an additional five to ten minutes
  • Transfer to a wire rack to cool.
Or...in a loaf pan...which will give a more sandwich loaf
  • Spray a loaf pan with a thin coat of oil and place the dough into it
  • Cover with a towel and leave rest for 35 minutes
  • Meanwhile.. preheat the oven to 450
  • Sprinkle a little flour on the top of the dough
  •  Place in the oven and bake for 35 minutes
  • Check occasionally as ovens vary and you dont want the crust to burn
  • Transfer to a wire rack to cool.
By the way... the casserole dish isnt dirty... its just flour burnt on the front and washes off easily

Adios Amigo...

MrD is sad today....

He put his Honda up for sale on Sunday... and less than 24 hours later it was sold and gone..for the full asking price.
Carpul Tunnel hands.. no time... and the feeling of getting too old for wheelies and jumps prompted his decision... but it was still a wrench

But still..he has his Harley for more gentle riding.. and the money will go into our "Homestead Fund"

So its not all bad

Whats For Dinner ~ Meal Plan Monday

I have some wonderful, generous friends.. who between them have been providing me with lots of delicious produce from their gardens. I have been given a bags of tomatillos, tomatoes, Zucchini, blueberries and pears.. We took a birthday gift to a friend who had just come back from a few days at their place in Julian... and she presented me with a basket of apples...on the promise that I would make her my Auntie Jeans Applesauce Cake. I think thats a fair swap...even tho I was going to make her one anyway! So I have to get these prepped and preserved. So I think its Salsa week in my kitchen.Not sure why I have never made it before.. but it will be a great way to use up the free veggies.. and give a jar or two as gifts.

Apart from that..nothing much is happening this week... which could be a good or bad thing..as it leaves a lot of scope for change....

Farmer Girl...

This Little Lady... 
takes after her Nana in so many ways...
She loves baking.. growing things in the garden...
and adores farm animals..
...especially goats
I can't wait til we get our much hoped for mini homestead...

Hot Time in the Kitchen..and Meringue Cookies...

Its been another busy.. and hot week in the kitchen. Having water boiling in your canner .. your dehydrator running .. baking...or standing over a hot pan stirring preserves is not really conducive to 100 degree weather. But we are now on Day 20 of the Every Bit Counts Challenge...and apart from the heat... its been really enjoyable. Plus...my pantry and freezer are looking pretty full.

Im still working with Gifts from the Garden... sale items... and coupons..so costs are pretty low. Also..Im teaching myself new skills.. and there are quite a few others on my list. Who knew that I would be making my own bread instead of buying from the store... and I have a recipe that is so quick easy.. no knead ...and cheap. If you would like it let me know.
Anyway.. this week.. amongst other things.. 
I have dehydrated and frozen blueberries... 
prepared carrots for the freezer...both chopping for soups..
and shredding for carrot cake.. 
and baked bread and  banana bread. 
 And yes ..it is baking in a casserole dish...
and no its not dirty..its just flour burning on the outside..
 and it does wash off.
We had spaghetti for dinner on Monday so I made a crockpot full of Bolognese sauce
 and froze the leftovers for an extra four meals.
But yesterdays prep should have come with a warning.. I nearly died during this!! Ok ok a bit dramatic but a note to oneself... next time you blitz dehydrated jalapeños and pink Himalayan salt together in the blender.. to make hubby’s favourite condiment.. Jalapeño Salt...  wait a few minutes for the dust to settle before opening the lid and peeping inside. Result...streaming eyes and burning throat lol. Also.. don’t breathe when pouring into the jar.... Definitely not tears of joy! Will I ever learn???
But Hey!! I think I just found another use for my covid mask!!
I also made my first ever Lemon Curd. Absolutely delicious.... and not wanting to waste anything.. used the leftover egg whites to make some crispy.. chewy Meringue Cookies. They look a bit funky... but I couldnt find the piping bag... so I used a sandwich bag with the corner snipped off. Doesnt affect the taste...so..what the heck!

Here's my recipe

Meringue Cookies


6 egg whites
1 1/2 cups sugar
1 pinch salt
1 tsp vanilla

  • Set oven to 200F. 
  • Line baking sheets with baking parchment
  • Separate the egg whites one at a time into a small bowl
  • Transfer each white to the bowl of your stand mixer. or a bowl and hand mixer 
  • Add salt to the bowl then begin mixing on low and gradually increase the speed to high.
  • Once the egg whites have frothed up you can begin SLOWLY sprinkling in the sugar. 
  • This step makes a big difference in your final meringues so take your time and add the sugar in gradually. 
  • After the sugar has been added it’s time to beat in some vanilla.
  • Your meringue is done once it has a thick marshmallowy texture and can hold a nice peak.  
  • Transfer to a piping bag fitted with a large star attachment or with the tip snipped off.
  • Meringue will lose consistency if it sits around for a while
  • Pipe your meringues allowing at least an inch of space between each for airflow.
  • Place on the center rack to bake at 200 for about an hour 
  • Then turn the oven off and keep closed for an additional 1-2 hours. 
  • The meringue cookies are done when they're are dried throughout. 
  • You'll be able to lift them off the baking sheet and they will feel very light and dry.
