The weather has really changed over the last couple of days. Its much cooler and the skies are quite grey. It even rained yesterday morning... a blessed relief after months of not even a drop. It actually feels more like autumn.
A couple of days ago my neighbours grandson came over for a couple of hours whilst his mum and grandma ran errands. We decided to make some cookies ready for Halloween. These are so easy to make a six year old can do them...and he did! Although I think more sprinkles went into his mouth than on the cookies. I quite like them without frosting so we left some undecorated too
1 pack Pumpkin Spice Cookie Mix
1/2 cup softened butter
1 large very ripe banana
Your favourite frosting... I used cream cheese but vanilla is just as delicious
- Pre heat oven to 350
- Line a cookie sheet with parchment
- Mash the banana
- In a large bowl stir together the Cookie Mix, butter, egg and banana
- Mix until everything is combined
- Using an ice cream scoop, drop the dough onto the baking sheet
- Space well as the dough spreads
- Bake for about 14 minutes
- Remove from the oven and leave on the sheet to cool for a few minutes
- Remove cookies to a rack to cool completely
- Once cool they are ready to frost
