In The Kitchen ~ Honey Garlic Shrimp

Little Miss has been busy in the kitchen again...
This time baking an amazing jam and cream sponge cake with Daddy...
It looked good...
and tasted good too..

Nana on the other hand is keeping her recipes nice and healthy. This week I made this tasty shrimp recipe. Having been off any kind of seafood for over thirty years (since I was pregnant with my eldest son)..I have suddenly gone crazy for Shrimp. Its a good job its low calorie...

I added the nutrition...just in case..

Honey Garlic Shrimp

1/4 cup honey
1/4 cup soy sauce (I use reduced sodium)
1 Tablespoon jarred minced garlic or 2 teaspoons fresh*
1 teaspoon minced fresh ginger (optional)
1lb medium uncooked shrimp, peeled & deveined
Pam Spray
chopped green onion for garnish (optional)

  • Whisk the honey, soy sauce, garlic, and ginger (if using) together in a medium bowl.
  • Place shrimp in a large zipped-top bag or tupperware.
  • Pour 1/2 of the marinade mixture on top and give it all a shake or stir
  • Allow shrimp to marinate in the refrigerator for 15 minutes or for up to 8-12 hours.
  • Cover and refrigerate the rest of the marinade .
  • Spray oil in a skillet over medium-high heat.
  • Place shrimp in the skillet and discard used marinade
  • Cook shrimp on one side until pink– about 45 seconds– then flip shrimp over.
  • Pour in remaining marinade and cook it all until shrimp is cooked through, about 1 minute more.
  • Serve shrimp with cooked marinade sauce and a garnish of green onion.
  • The sauce is excellent on brown rice (75cals per 1/2 Cup cooked) and steamed veggies on the side.
