Strawberry Jam...

Its Thursday already.. and as well as getting out on walks... and finishing some long overdue craft projects.. I have been spending some time in the kitchen. Its that time of year again when I start canning.. dehydrating and freezing seasonal produce that is cheap to buy... This pandemic has proven to me how essential it is to keep a good pantry and make the most of the foods we have.

When life gives you strawberries... make the most delicious.. and easy.. jam

Strawberry Jam
At my local store right now... they are selling punnets of strawberries for 99c. They are beautifully ripe.. have a lovely flavour and need no extra sweetness. They can be dehydrated...made into pie fillings or dessert toppings.. or like I have done.. made into jam.
This is a recipe I have used for a long time.. and it comes out perfect. Each batch takes about an hour to make... and I have enough now to last til next season

5 cups hulled and crushed strawberries
7 cups sugar, measured into separate bowl
1/4 cup lemon juice
1/2 tsp. butter or margarine (optional)
1 pouch Fruit Pectin

  • Measure 5 cups prepared strawberries into large saucepan. 
  • Add sugar and lemon juice; mix well.
  • Bring to boil on high heat; cook 1 min.
  • Remove from heat. Stir in pectin.
  • Stir and skim 5 min. to prevent fruit from floating to surface. 
  • Ladle into warm sterilized jars, filling up to 1/4 inch from rims. 
  • Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.
  • Process in boiling water canner for 10 minutes
  • Listen for the popping (love that sound!)
  • Let stand at room temperature 24 hours and check for seal
