The weather has certainly changed. It colder in the mornings... but still in the mid 80s in the afternoon. Thats probably why I have the sniffles... earache and a sore throat. So Im dosing myself.. and enjoying some comfort food with a slice of freshly baked Apple and Raisin Cinnamon Loaf with a lovely cup of tea. And I must say the house smells wonderful.
Apple and Raisin Cinnamon Loaf
1/2 cup packed brown sugar
1 1/2 teaspoon ground cinnamon
2/3 white sugar
2 teaspoon vanilla extract
1/2 cup butter soft
2 eggs
1 1/2 teaspoon ground cinnamon

1 1/2 teaspoon baking powder
1 1/2 cups all purpose flour
1/2 cup milk
1/2 cup raisins
1 large apple diced
1 1/2 cups all purpose flour
1/2 cup milk
1/2 cup raisins
1 large apple diced
- Preheat oven to 350
- Grease 9x5 loaf pan
- Mix brown sugar and cinnamon together in a small bowl set aside
- In a mixer beat white sugar and butter together until smooth
- Add the eggs and vanilla and continue to beat on medium speed
- Add the milk and mix
- Add flour and baking powder and mix
- Fold in the raisins and half of the apples
- Pour into the prepared loaf pan
- Cover with the remaining half the apples
- Pat into the batter with the back of spoon
- Sprinkle with the sugar and cinnamon mixture
- Bake for 50 mins to an hour ..depending on your oven
- Serve slices cool.. with or without a spread of butter.. or warm with a scoop of ice cream.
