Dehydrating Kinda Day....

I managed to pick up four heads of celery for $1 at the local market. Thats too much for two people to eat in a week....or two ...or three. So I decided to dehydrate them..
Its about time! Ive only had it since last year (shame on me)!
Also.. Hubby was given a bag of apples... and three avacados from a work mates garden. Now the avacados will make a lovely guacamole..but the apples I plan to dehydrate tomorrow and also make some apple sauce.
 I spent well over an hour trimming, chopping and washing the stalks...
and blanching them for a few minutes in boiling water
Then spreading them evenly on dehydrater trays.
 I dont throw away the heads or bottoms...as they are full of flavour.
I pop them in a ziplockbag and stick them in the freezer
They are ideal for when you are making stock or beef broth
 After 12 hours they are ready...
and its crazy they have dried to almost nothing
Five trays of celery reduced to less than a pint jar

 But it will be wonderful in soups and stews

  5. I've never used a dehydrator, but what a great way to use celery that's on sale. I usually chop it up and freeze it, then throw it in soup.

  6. I see we have the same dehydrator! But I've never tried drying celery.

    You asked about my jam making. I don't use any pectin, I just boil it until it's reasonably thick adding less sugar than most people do because we like some tartness in our jam. Then, if it still needs a bit more thickening I will mix up some cornstarch and stir that in. We make our jam as we need it and it stays good in the fridge for a couple of weeks( depending how much toast we eat!).

    What a wonderful idea! I have been dehydrating tomatoes, I love them in soups, stews, on pizza...just anything where you use tomatoes! I don't use celery very often, so I don't always have it on hand. What a great way to have it when I need it! I love the idea of keeping the celery bottoms, they really are just full of flavor!
