Meal Plan Monday

At last the Christmas tree is up and we switched the lights on yesterday in memory of Mum. Its quite pretty and I think she would approve. Now the decorations are up I feel ok about doing Christmasy stuff so MrD and I are going to do just that. He says he has a few things in mind..and I just have to wait. Exciting!

Im hoping to get a bit of crafting done this week... and some Christmas baking...even make some gingerbread men, We shall see.

This week I have to go for blood tests again ready for a meeting with Dr Phan next week. Everything seems to be ok. I have more energy now and really back into the swing of things. I still have to have my porto cath flushed every month to avoid blood clots.. but if the cancer doesn't come back within six to twelve months..I can have it taken out.

So on this weeks menu we have the other Turkey Pot Pie that hubby enjoyed so much... the usual Mexican meal on Tuesday.. and of course the obligatory Pork Chops...done in the slow cooker so they can simmer until we get back from my blood tests. Friday...I'm using up the veggies in our fridge in a nice and spicy ratatouille and then the weekend.. I don't have to cook at all..A nice way to round off the week

I hope you all have a good one

  2. All the best with your blood tests. Don't you love pork chops in the crock pot? We love Mexican dishes, too. I know your home is pretty decorated for Christmas and it will smell good too with your Christmas baking.

  3. Wow, you are super organized....I don't know what I'm having tomorrow, or the next day and I already forgot what I had for supper tonight! (just kidding!) But I haven't planned like that for a while...I yearn for the days when I was more organized. Wishing you the continued good health....xxLinda
